Don Totò - Red

The DON TOTO' red comes from espalier vineyards having a density of 3400 plants per hectar. The pruning is done by gujot.

100% Nero d'Avola with high barriques
It's a strong, imposing, determined, generous wine, bound to leave a mark, just like the founder of the lineage from which it takes the name and the effigy on the label. The wine is elegant, complex, full-bodied to the taste, with an unmistakable color and aroma.
The aging in barriques never overpowers the personality of the Nero d'Avola in purity.

Notes of the Baron Nicolo'

I wished to dedicate this wine to my ancestor Salvatore, “Don Toto'”, who was not only the founder of the farm and a brilliant businessman, but also a source of pride and inspiration for me.
Following his noble and far-seeing example, I wanted to keep high the honor of the lineage, using all that from him was handed down to me in terms of knowledge of the land and respect fo the traditions.
As himself, I dedicate all my time in reaching the excellence of my product, trying to hand down all the expereience acquired on the fiels to who of the family will keep on following these objectives.

Smell: aroma of ripe fruit and jams, light inkling of vanilla, extremely wrapping and involving.
Taste: complex, soft, balanced, the barrique does not prevail. Awesome inkling of sour-cherry in back-smell.
Best served at: 18-20°C
Matching: Roasts and fat meats, very savoury and aromatic cheeses.
